Stuffed Sweet Potatoes 4

STUFFED BAKED APPLES/ SWEET POTATO

INGREDIERNTS

  • 20g walnuts
  • 30g dried apricots
  • 25g sultanas
  • 1 tsp ground cinnamon
  • 20g pumpkin seeds
  • finely-grated zest and juice 1 orange
  • 6 eating apples, unpeeled and cored NB1
  • 1 tbsp. water

INSTRUCTIONS

  1. Preheat the oven to 350°F 180°C / gas 4
  2. Mix together the walnuts, apricots and sultanas, then place on a board. Finely chop together to create a paste, then mix in the pumpkin seeds, cinnamon and orange zest.
  3. Stuff the center of each apple with the mixture, pressing it firmly into the fruit.
  4. Place the apples into an ovenproof dish with the water, then drizzle the orange juice over them.
  5. Cover with foil and bake for 20 minutes. Remove the foil and continue to bake for 10-15 minutes.
  6. Serve with a dollop of low-fat yogurt or non-dairy alternative.

NB1 instead of apples try steamed sweet potato.

Ingredients

¼ cup olive oil

2 tablespoons treacle (molasses) Try a low GI honey

300 g bread and pastry flour

2 tablespoon ground ginger

1 tablespoon mixed herbs

Cinnamon to taste

1 egg, lightly beaten

 

 

Directions

  1. Preheat oven to 150 C, place a non stick baking tray into the oven.
  2. In a saucepan place the oil and molasses and gently heat to blend together.
  3. Remove from heat, place in half the flour and other ingredients. Mix well with a wooden spoon.
  4. Tip onto a floured surface and knead in the remaining flour.
  5. Roll out and cut into desired shape, cut into shapes; stars, Christmas tree, reindeer etc.
  6. Place on baking tray and bake for 10 minutes or until firm to touch.
  7. Decorate with fresh fruit and vegetables.

 

 

A Gluten free and sugar free version.

 

Ingredients

¼ cup of Stout or soda water

1 ½ cups of bred flour

1 Serve of pumpkin, sweet potato, or boiled Basmati rice

2 tablespoon ground ginger

1 tablespoon mixed herbs

Cinnamon to taste

Any other herbs, spices to taste

1 teaspoon of dried yeast.

2 egg whites, lightly beaten

 

Directions.

  1. Mix all ingredients together.
  2. Allow to rise in a warm place for about 1 hour
  3. Roll out on a floured surface, cut into shapes; stars, Christmas tree, reindeer etc.
  4. Place on a non stick baking tray and allow to rise again for about 1 hour.
  5. Bake in a preheated oven at 150 C for 20 minutes or until firm
  6. Decorate with fresh fruit and vegetables.
