In many cultures Black Chicken has health benefits.


Yields: 6 servings

1 2 kg black chicken skinned
4 chicken carcasses
2 yellow onions
2 tablespoons olive oil
1 package dried shiitake mushrooms
1 package dried white fungus mushrooms
1/3 cup almonds
1 (6-ounce) package dried dates
1 tablespoon ginseng
1 (75 mm) piece fresh ginger
1 (100mm) turnip, peeled
1 carrot, peeled
2 tablespoons greens onions, chopped
1 teaspoon black pepper, freshly cracked




Preparing the chicken:

Wash the chicken carcasses and whole chicken.

Place the chicken and carcasses in a large stock pot and bring to the boil.

Lower the heat to a good simmer for 3 minutes.

Remove the chicken and carcasses and strain the broth. Set aside.

Peel one whole yellow onion try to keep it whole.

Bruise the ginger using a kitchen cleaver or mallet.

Slice up the remaining onion and cook in the olive oil without burning

Place the chicken, the peeled onion, the carcasses and all other ingredients in a slow cooker. Cover with the strained broth and simmer overnight (about 6 hours.)

Remove the chicken carcasses. Remove the whole chicken from the pot. And shred the meat.

Season with ginger and pepper to taste.

Garnish with green onions.


Any left over stock can be kept and frozen as a salt and sugar free low fat chicken broth.

The bones can be further used to make more stock.
